Raw Cauliflower Curry Salad

Earlier this year we went on a really brief raw diet - I think we lasted all of 10 days. But we handled the whole thing wrong. We started the diet at the beginning of February, which isn't the best time for vegetable options, at least not any that you're going to eat at room temperature (which hovers around 60 in our house). It was also incredibly difficult to get enough calories for me to stay warm, especially at night. We tried to pack in protein with sprouted legumes and lots of nut-based cheese, but it was really too hard for me to stay warm. It was like my bones were made of ice.

We pulled spring onions from the garden yesterday. We'd heard of a tradition in Spain where spring onions are harvested, roasted and wrapped in newspaper, then buried for some time to allow them to steam until limp. Once they're done, folks gather around with big bowls of romesco and wine, peeling the onion and dipping the limp onion into the sauce, and then into their mouths, using their teeth to pull the goodness out of the middle of the bulb.

Obviously we're playing catch-up on pork, this being the 4th or so dish in the last week. We had already defrosted pork steaks for the bean dish, but went with ham hocks instead and had to use these up. This recipe comes from Patricia Wells' At Home in Provence, our guidebook this season, but we made some modifications to her recipe (originally titled Spit-Roasted Brine-Cured Pork) by using pork steaks instead of a pork loin, and pan-frying instead of spit-roasting (for obvious reasons).
