After making my first really successful crust at Kate McDermott’s Art of the Pie class, I knew I’d need some practice quickly to reinforce what I’d learned. I sent a message to friends: bring me a pie pan and a few bucks and I’ll make you a pie. I got no shortage of takers.

Lemon wafers have always evoked springtime for me - bright, sunny flavors, a clean spicy scent, and delicate like a little tuft of cake. These lemon ginger wafers are no exception - the freshly shaved ginger and the tangy lemon zest dance about your mouth and marry with sugar for crisp buttery edges.

After ten years of baking evolution, this recipe still knocks it out of the park and is worth the price of the book alone.

I've made a lot of lemon bars, and I even baked the Apricot Lemon Bars from Cookies and Brownies three times, just to make sure I'd given it a fair shake. But these lemon bars were just right the first time out of the oven, and are the only things I've made lately that I've hoarded.
