Blueberry Tarragon Soda

The other night after making Grapefruit Tarragon sorbet, I found myself with a few tablespoons of tarragon syrup. Not wanting to waste it, I tossed in a handful of blueberries from our garden and threw the dish in the oven for a few minutes. When it came out, the blueberries were glossy and had seeped juice into the mixture, leaving us with about 1/4 cup of blueberry compote, which Todd ate over ice cream. He left me the syrup, which I promptly poured over ice cubes and topped with sparkling water. A very happy accident, just like the lovage spritzers. I think you might want to give this soda syrup a try too!


There's not much of a recipe to this, but you can refer to the Grapefruit Tarragon sorbet post for instructions on the tarragon syrup. To flavor it with blueberries, simply add some of the syrup to a baking dish or a small saucepan, toss in some fruit and cook until softened. Remove the berries and use the syrup for drinks.
